Amer Mutton BadamiIngredientsGhee 30 gms
Onion(chopped) 150 gms
Leg of Lamb 400 gms
Garlic Cloves 2
Ginger(chopped) 10 gms
Yoghurt 125 mls
Mango Pulp 125
Turmeric 1/2 tsp
Coriander 2 tsp
Cumin(ground) 1 tsp
Nutmeg(ground) 1/2 tsp
Cayenne Pepper a pinch
Single Cream 125 mls
Almonds(ground) 25 gms
Salt
Garam Masala 1 tsp
Methods/stepsMelt the butter in a frying pan. Sweat the onions until just light brown. Add the lamb and cook until sealed. Add the garlic; ginger; yogurt; turmeric; corinader; cumin; nutmeg and cayenne pepper. Just cover with water and allow it to boil. Cover with a suitable lid; simmer for 30-45 minutes or until the meat is tender. Stir in the cream; ground almonds and salt and garma masalam cover it and brind back to boil.
