For the Syrup:
Apples 3
Sugar 12 oz
Water 5/4 pint

Methods/stepsPeel; core and cut the apples into 8 pieces each. Put these in a covered saucepan with 5/4 pint water; heat for 5 minutes and drain. Put sugar and 5/4 pint water in another saucepan. Add the apple pieces and heat for 1/2 hour till about one third of the syrup remains. Add a pinch of saffron just when the solution begins to boil. Heat 3 tbsp ghee in a saucepan and add the bay leaves; cinnamon; cloves and cardamoms. Fry for a minute or two; and then add the rice. Next add sliced almonds and raisins and fry for 2-3 minutes; and then add 1 1/2 pints cold water. As soon as the water begins to boil; add 2-3 pinches of saffron. After about 15 minutes; when the rice is almost cooked; take the saucepan off the heat. Make a hole in the center of the rice and place the apple pieces with a little syrup in it. Cover with rice and pour the rest of the syrup on top. Now cook on a low heat for 15-20 minutes until the rice is completely cooked. Reviews |
