Brinjals 2 (aubergines long thin ariety) Cooking bananas 2 Potatoes 2 large Marrow 4 oz French beans 4 oz Bitter beans 4 oz Thick long drumsticks1 or celery sticks 3 Ash gourd 4 oz Green Chillies 8 Coconut 1/2 Sour curd or yogurt 1/2 pint Turmeric powder 1 tsp Cumin seeds 1 tsp a sprig of curry leaves Fresh coconut oil 2 tbsp Salt to taste

Methods/steps

Wash and clean the vegetables. Remove string from beans and drumsticks. Peel potatoes and ash-gourd. Scrape skin off marrow. Cut up all the vegetables into 2 inch pieces do not remove skin from bananas. Put enough water in a saucepan to cover all the vegetables and add vegetables. Having first boiled those that take longer to cook. Add turmeric and 2 curry leaves and boil till tender. Add salt and turn the vegetables carefully so as not to break the pieces. Grate the coconut. Take green chilies; grated coconut; cumin seeds and grind to a thick paste. Add a little water to this masala and pour into the vegetables. Cook gently for 2 minutes. Add 1 cup of water to the curd and whip tills smooth. Add this buttermilk to the vegetables. Dip a small bunch of curry leaves in the oil and also adds to the vegetables. Bring to the boil and remove from heat. Pour remaining oil on top and mix gently.
