Badami Gosht - Meat with AlmondsIngredientsMeat 2 lb
Dry red chillies (or half the quantity) 14
Coconut 1
Almonds 4 oz
Cloves 6
Onions 8 oz
Cinnamon 4 sticks
Ginger 1 1/2 inch piece
Cardamoms 4
Cloves garlic 6
Caraway seeds 1/2 tsp
Turmeric powder 1 tsp
Ghee 6 tbsp
Curd or yoghurt 1/2 pint
Salt to taste
Methods/stepsWash the meat and chop into 1? inch cubes. Soak it in a mixture of curd and turmeric for 1 hour. In the meantime; grate the coconut and extract the milk twice. Soak the almonds in hot water; wash and peel; then grind them to a fine paste. Grind the garlic and ginger. Then grind the red chilies along with the salt; to a fine paste. Slice the onions. Heat ghee in a saucepan; add cloves; cinnamon; cardamoms; caraway seeds and onions. After the onions are lightly fried; stir in the ground ginger and garlic; and then add the ground chilies. Fry on a low heat till onions are well browned; add the meat and cover the saucepan. Add a little warm water after the meat is half cooked. Add the coconut milk. When the meat is tender; put in the ground almond paste. This should be kept on a very low heat until the ghee floats to the top. Serve hot with parathas. Reviews |
