Baked CucumbersIngredientsEven shaped cucumbers 4 large
Butter 3 tbsp
Onion(chopped) 1 1/2 tbsp
Tomatoes(diced) 1 cup
Celery(finely chopped) 1 tbsp
Parsley(finely chopped) 1 tbsp
Salt & pepper to taste
Fine dry breadcrumbs 3/4 cup
Cheddar cheese(grated) 1 cup
Methods/stepsCut the cucumbers in half lengthways; scoop out the pulp leaving enough cucumber to hold the shell in shape; reserve the cucumber pulp. Arrange the cucumber shells in a greased baking dish. Heat the butter in a pan and saute the onions until they become translucent; add the tomatoes along with the celery and cucumber pulp and saute for a few more minutes or until they begin to dry; stir in the parsley; salt; pepper and breadcrumbs. Place the filling in the cucumber shells and sprinkle with the cheese. Place the baking dish in a preheated oven at 190C/375F and bake until the shells are soft and the filling is brown on top.
