Medium-sized potatoes 1/2 kg Oil 4 tsp Salt to taste

Methods/steps

Rub the cleaned potato skins with a little oil and salt. Bake at 200?C for 1-1? hours until tender. For stuffed potatoes; choose any of the options listed below. Make a cross? shaped cut in the potatoes and spoon in the fillings. Optional Fillings: Warm a large can of baked beans; spoon into the potatoes and sprinkle over 1 tablespoon each of chopped green capsicum and onion. Fry 1 seeded and sliced red capsicum and 1 sliced onion in 1 tablespoon oil. Fill the potatoes with 225 gm garlic and herb soft cheese and top with the capsicum and onion. Fill 225 gm warmed tomato pasta sauce into the potatoes. Add 4 halved black olives. Sprinkle over 100 gm grated cheese. Grill for 3 minutes. Garnish with sliced tomatoes. Fill the potatoes with shredded iceberg lettuce. Add some cooked rice tossed with Worcestershire sauce. Peel and sliced 1 avocado and place over the rice. Spoon on 4 tablespoons soured cream and sprinkle 4 tablespoons fresh chopped chives. Fill the potatoes with grated cheese. Spoon over 4 tablespoons thousand island dressing. Fry 1 red onion in 1 tablespoon oil to garnish the potatoes.
