Beetroot and Orange SaladIngredientsBeetroot; cooked; peeled and drained 1
Boiled rice 1-1/2 cup
Oranges 4
Salt to taste
Black pepper to taste
Dressing:
Orange rind; finely grated 1/2 tsp
Garlic clove; crushed 1
Mustard powder 1 tbsp
Honey 2 tsp
Yoghurt 4 tbsp
Methods/stepsSlice the top and bottom off each orange and remove the skin and pith. Holding the orange over a bowl; carefully slice the segments. Collect the juice in the bowl and leave to chill. Place the segments in a separate bowl. Dice the beetroot into small cubes; mix with the orange segments and leave to chill. In a bowl mix rice with orange juice and season with salt and pepper. In a salad plate spoon over rice and top with the beetroot and orange mixture. Mix all the dressing ingredients together and spoon over the salad or serve separately in a bowl. Reviews |
