?Bharuchi? Braised Lamb (Kid)IngredientsLamb 31/2 lb
Cinnamon 1 inch piece
Potatoes 2 lb
Garlic 1 pod
Ghee 8 tbsp
Ginger 1/2 inch piece
Onions 10 oz
Dry red chillies 2
Milk 1/2 pint
Saffron 1/2 tsp
Coconut milk 1/4 pint thick
Limon 1/2
Seeds of two cardamom pods
Salt to taste
Methods/stepsFry finely sliced onions in deep fat until brown and crisp. Crush to a powder. Clean the meat and cut into 12 pieces; then smear it with a paste made of ground ginger and garlic; salt and the onion. Marinate for an hour.Boil the potatoes; peel; cut into halves and fry them. Grind the rest of the spices except chilies and saffron. Heat the ghee and fry the lamb pieces in it; then add the chilies and ground spices. Reduce heat and cook until meat is tender. Lastly; add the saffron (which should previously have been soaked in the lemon juice); potatoes; coconut milk; milk and salt if needed. Serve hot. Reviews |
