Phase 1 Ingredients
Chicken cutlets 1 lb (6 cutlets)
Eggs; beaten 2
Milk 1 cup
Flour 1 cup
Seasoned bread crumbs 1 cup
Grated Parmesan cheese 1/2 cup
Olive oil 1/2 cup
Phase 2 Ingredients
Loaf bread or pizza dough 1 lb
Olive oil 1/2 cup
Margarine or butter 1/4 tbsp
Cloves garlic; mince 2
Mozzarella cheese; sliced 8 oz
This is a 2 phase recipe and makes 2 loaves
Methods/stepsPhase 1 Method Heat oil in frying pan; mix grated cheese width seasoned breadcrumbs. For each cutlet: dip in milk; dredge in flour; dip in egg; and dredge in breadcrumb mixture. Fry cutlets until browned on each side. Phase 2 Method Heat olive oil and margarine until bubbling; and then add garlic. Saut?. Roll out bread dough to make an 11 * 17 rectangle. Slice this in half. For each half of the dough: brush with garlic mixture; turn on the diagonal so that dough appears to be diamond shaped. Lay ? of the cutlets across the long end of the dough; cover with slices of mozzarella cheese. Bring the two short ends over the top of the cutlets to seal; brush top of dough with garlic mixture. Bake at 350 for about 30 minutes; or until bread is golden brown. Reviews |
