Potatoes 1 kg Mustred Oil 250 g Salt to taste Ghee 4-5 tbsp Asafoetida a pinch Cloves 4 Cumin Seeds 1 tsp Ginger(cut into juliennes) 1 tsp Green Chillies(finely chopped) 2 Red Chilli powder 1 tsp Coriander Powder ` 2 tsp Water as required Dry ginger powder 1 tsp Sugar 1 tsp Gram Masala Powder 1 tsp Yoghurt(beaten) 125 g

Methods/steps

Parboil the potatoes till a fork goes through easily. Drain;cool and peel. Pierce each potato with a toothpick till it fully covered with holes Repeat process with all potatoes. Heat mustred oil in a wok till it begins to smoke; allow it to cool down; fry the potatoes till they are uniformly brown. Sprinkle a little salt water over them while frying & soften the potatoes. Remove with a slotted spoon; drain. In a seprate pan; heat ghee. Add asafotida; cumin; ginger and green chillies and stir for few seconds. Add the potatoes; and sprinkle the red chilli; coriander powder and salt. Add water and simmer till all water is absorbed and potatoes are fully cooked. Mix the dry ginger; gram masala powder and sugar into the yoghurt; stir this into the potatoes. Cover and cook on very low heat till the oil comes to surface.
