Egg Nargis KoftaIngredientsEggs 4
Green chilli 1 minced
Bread 1-2 slices
Onion 1 tsp minced
Ghee 1 dessertspoon
Salt to taste
For the Tomato sauce:
Saut? 1 small finely chopped onion in a little batter. Add the following ingredients and simmer till tender:
Ripe tomatoes (peeled) 1 lb
Garam masala 1/2 tsp
Chopped coriander leaves 1 dessertspoon
Chilli powder 1 tsp
Salt and pepper
Methods/stepsHard boil the eggs; shell and keep on one side. Crumble the bread and soak in cold water. When soft; drain and squeeze out all liquid and mash well with a fork. Divide the eggs lengthwise and carefully remove the yolks. Mash the egg yolks into the bread and add melted ghee. Stir in the onion; chili and salt and mix well. Heap the halved egg whites with this mixture. Place the stuffed eggs carefully in a flat fireproof dish and pour the prepared tomato sauce over them. Cover the dish and place in a moderate oven. Cook just long enough for the sauce to simmer. Remove and serve immediately with hot chappatis. Reviews |
