Unsalted butter 1 cup Salt 1 tsp Sugar 3/4 cup Vanilla Extract 1 tsp Unbleached all purpose flour 2 1/3 cups Strawberry jam 1 1/4 cups

Methods/steps

Preheat oven to 300 degrees F. Lightly grease 29 round cake pans. In medium sized bowl;cream together butter;salt;sugar and vanilla; then beat in flour. Divide dough in half and press it into prepared pans;smoothing surface with your fingers. Prick dough with fork. Bake short bread 35-40 minutes;until golden brown around edges. Remove from oven and lossen edges with knife. Wait 5 minutes;then turn shortbread out on to clean work surface;all in 1 piece. With a sharp knife and pizza wheel;cut each round into 12 edges. Transfer wedges to a rack to cool completely. Crumble 2 short bread wedges into a small bowl and set aside. Spread remaining wedges with a thick layer of Jam Sprinkle reserved crumbs lightly over jam.
