Malabar Banana DessertIngredientsMalabar bananas 6 ripe
Grated coconut 8 oz
Eggs 2
Raisins 2 tsp
Milk 1/4 pint
Vanilla essence
Sugar 2 oz
Butter 2 tbsp
Cloves 12
Crushed almonds 1 dessertspoon
Methods/stepsWash bananas and steam, without removing the skin, till soft. Cool, peel and lay them in a flat dish. Cut each lengthwise and carefully remove the string of seeds. Mash with a fork to a smooth dough adding a little butter. Shape into 12 balls. Beat the eggs and stir in milk, sugar and almonds. Blend well together with the coconut and raisins. Melt a little butter and scramble the egg mixture till frothy. Add a dash of vanilla essence. Now take each banana ball, flatten it in the palm of your hand and pile a tsp of the egg mixture in the center, cover the stuffing carefully and roll into a ball again. Stick a clove into the top. Place in a dish and chill overnight. Serve with cream. If desired the balls may bed fried in hot ghee dipped in batter and served hot. Reviews |
